Low Carb Greek-style Flank Steak with Tangy Yogurt Sauce


Ok, I know this is going to sound paradoxical, but here goes: I’m on a mission to eat healthy, but also eat the most delicious food I can find. 

Tony, are you crazy? Nope. Even the venerated Mark Twain has been credited to say this about food, “The only way to keep your health is to eat what you don’t want, drink what you don’t like, and do what you’d rather not.”

No disrespect, Markie Mark, but I’m going to disagree. Why can’t we cook healthy food that’s absolutely delicious? I say we can!

My life has been a steady quest to find some of the best foods with the healthiest ingredients so you won’t have to give up deliciousness in exchange for healthy.

Today I share my recipe for Low Carb Greek-style Flank Steak with Tangy Yogurt Sauce. Lemon, garlic, and oregano bring out the flavors of this bold and flavorful Mediterranean dish. 

You can substitute out chicken or eggplant for a non-beef or vegetarian version of this dish.

Low Carb Greek-style Flank Steak with Tangy Yogurt Sauce


  • 12 oz beef flank steak

For Marinade:

  • 1 TBS Olive Oil
  • 2 tsp fresh oregano, chopped
  • 1 TBS Minced Garlic

For Yogurt Sauce

  • 1 C Cucumber, peeled, chopped and seeded
  • 1 C Nonfat Plain Yogurt
  • 2 Tbs Lemon Juice
  • 1 Tbs Fresh Dill, chopped
  • 1 TBS Fresh Garlic, minced
  • 1/2 tsp Garlic

Recipe and Variations

  1. For the marinade, combine lemon juice, olive oil, oregano, and garlic in a large bowl.
  2. Lay steak in a at container with sides and pour marinade over the steak. Let the steak marinate for at least 20 minutes or up to 24 hours, turning several times. 
  3. Combine all the ingredients for the yogurt sauce. Set yogurt sauce aside for at least 15 minutes to blend flavors. (Sauce can be prepared up to 1 hour in advance and refrigerated.
  4. Preheat oven broiler on high temperature, with the rack 3 inches from heat source
  5. Broil steak for about 10 minutes on each side (to a minimum internal temperature of 145 oF). Let cool for 5 minutes before carving.
  6. Slice thinly across the grain into 12 slices (1 ounce each).
  7. Serve three slices of the steak with 1⁄2 cup yogurt sauce on the side.

Tip: Try serving in a sandwich with pita bread, lettuce, and tomato.
