Fork Approved Healthy Pie Crust Recipe For Thanksgiving

Here’s a great Fork Approved Healthy Pie Crust you can try that uses almond flour and yogurt instead of entirely all all-purpose flour and butter!

Substituting in almond flour eliminates empty carbs and replaces them with a healthy fat. This will help to stabilize your blood sugar and not leave you feeling the urge to cut another slice!

Fork Approved Healthy Pie Crust

  • 1 1/4cup all-purpose flour
  • ¾ cup almond flour
  • ⅛ tsp salt
  • 8 tablespoons (1 stick) cold unsalted butter, cut into chunks
  • ⅓ cup reduced fat (2%) plain Greek yogurt
  • 3-4 tbsp ice water

Preparation

  1. Combine all-purpose flour, almond flour and salt in a food processor; pulse several times to blend.
  2. Add butter and process until the mixture resembles coarse meal, 8 to 10 seconds.
  3. Add yogurt and pulse until combined.
  4. With the motor running, add ice water, 1 tablespoon at a time, until the dough holds together without being sticky or crumbly.
  5. Divide the dough into 2 equal portions, shape into disks, and wrap each in plastic wrap.
  6. Refrigerate until firm, about 30 minutes or up to 3 days.
  7. Let stand at room temperature for 10 minutes before rolling.

Tips To make ahead:

Refrigerate for up to 3 days or freeze for up to 3 months. Thaw in the refrigerator, if necessary, and let stand at room temperature for 10 minutes before rolling.
