Aunt Marie’s Slow Cooker Sweet Potato Chili

Today I share my recipe for Aunt Marie’s Slow Cooker Vegetarian Sweet Potato Chili. This Fall Favorite will tease your palate and warm your insides just in time for sweater weather! You’ll save a bunch of time and calories with this choice recipe!
Slow Cooker Vegetarian Sweet Potato Chili
Ingredients:
- cooking spray
- 1 – 14oz. can pinto beans, drained and rinsed
- 1 14oz. can fire-roasted tomatoes, diced
- 4 tbsp tomato paste
- 2 cups sweet potatoes, cubed
- 1 cup dry quinoa
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1 1/2 tbsp chili powder
- 1 1/2 tsp cumin
recipe & variations (prep time 15 minutes)
- Spray slow cooker with cooking spray.
- Place all ingredients into slow cooker and stir.
- Cook on high heat for 4 hours
